Mandi Buckalew quit her job as a teacher and opened up a bakery, Cakeapotamus, in 2013 as a way to start a new chapter in her life after battling and defeating thyroid cancer.

“People let you get away with a lot, and that was very empowering for me. So, going through that, I was like I don’t care about what anybody thinks, I’m going to put the things I love here,” said Buckalew.
