On Tuesday, September 27th we hosted Pregúntale a los Expertos (Ask the Experts) with Altagracia Gomez, nutrition expert and community educator – and it was a great success! For those of you who may not be familiar with our new series, Pregúntale a los Expertos is conducted fully in Spanish and provides direct access to experts in various fields to answer your most pressing questions on work and cancer. The series is running through Hispanic Heritage month and has two more sessions coming up (more info below!).
During our last session, Altagracia shared tips and tricks about balancing nutrition, work demands and treatment. Throughout the conversation, Altagracia emphasized the importance of eating fruits and vegetables and stated that they should be half of “the plate”. When asked about healthy meals and snacks when one is too tired to cook due to work or treatment, she mentioned fruits and veggies again. One option she recommended is boiling potatoes, garlic, carrots, and spinach (or kale), while another option is drinking a spinach-banana smoothie. She also stated that fruits, such as pineapples, oranges and apples, will always be the easiest and healthiest snack.
Are you planning to try the recipes above? I’m personally looking forward to trying them and incorporating Altagracia’s recommendations in my meals. Hearing her speak made me realize that nutritious meals/snacks are way more accessible than what we think. It’s a matter of changing the mindset about what I consider quick and healthy foods.
